Gaby's Bakery - Turmeric & Ginger Energy Balls

These will put some zip into your day. Energy balls are quick to make and a super-healthy handy snack. Turmeric has many scientifically-proven health benefits, such as the potential to prevent heart disease, Alzheimer's and cancer. It's an anti-inflammatory and antioxidant and may also help lessen symptoms of depression and arthritis.

Ginger is full of antioxidants, that prevent stress and damage to your body's DNA. It is also thought to help fight chronic diseases like high blood pressure, heart disease, and to slow aging.

Turmeric & Ginger Energy Balls

Ingredients:
75g raw almonds
60g raw walnuts
50g pitted dates
1½ tsp ground turmeric
1½ tsp ground ginger
1½ tbsp water

Method:
Soak the dates in a little hot water for 10 mins.

Blitz the almonds and walnuts in a food processor until they resemble crumbs (but are not completely ground to a flour). Chop up the dates, (don’t throw away the water) and add to the processor with the turmeric and ginger. Blitz again until dates are mixed through and then add 1 tbsp of the date-soaked water. Blitz again for a few seconds.

Take spoonfuls of the mixture and roll into balls, (I made 8 from above quantity). Refrigerate for an hour to firm up. Keep stored in the fridge.
